Preparation of turmeric powder with various extraction and drying methods

Abstract Background In this study, turmeric ( Curcuma longa L.) powder was prepared with various extraction and drying methods. Extractions were performed using three solvents (water, 50% ethanol, 70% ethanol) methods, namely, spray (SD), freeze (FD), spray-freeze (SFD). Results Levels of the curcuminoids, curcumin, demethoxycurcumin, bisdemethoxycurcumin, in preparations analysed HPLC, scanning electron microscopy laser particle size analysis used to observe estimate surface distribution particles. The total amount curcuminoids ranged from 0.59–14.35 mg/g powder, as concentration ethanol increased, level antioxidant activity, average significantly increased (all p < 0.05). addition, abundance order SFD, FD, SD (p 0.05), whereas Conclusions highest TPC TFC detected SFD preparations, SD.
